Ice wine is a dessert wine variety created from grapes that, while still on the vine, have been frozen. The water freezes, however the dissolved solids and the sugars do not. With ice wine, it is before the grapes ferment that they are frozen and not after. Grapes typically utilized for producing ice wines include the Riesling grape, which is the noblest of varieties according to German standards. One highly popular grape in Ontario, Canada and British Columbia is called the Vidal. Many new world vintners are creating ice wine out of red grapes such as the Cabernet Sauvignon, the Pinot Noir and the Merlot. They are also creating this exclusive wine from white grapes such as the Chardonnay, Seyval Blanc, the Pinot Blank, Chenin Blanc and the Gewurztraminer. Ice wines from red grapes are typically a pink or a light burgundy color not unlike rose wines. White varieties tend to be light golden or pale yellow in color when these are younger and can acquire a depth of golden amber colors as they age which is called ‘maderise.’
