Winemakers may want to control the process a bit so that the alcohol will remain in reasonable limits. Juices are abundant because the berries that have thin skins and the grapes need extra care while in the process of harvesting.

Producing Chardonnay wine is a very delicate process since it involves the risk of being oxidized during the process. The particular climate in California generates a variety of flavors including apple, pineapple, melon, peach and lemon. Likewise, California Chardonnay wine from warm climates may develop less of fruit and more of nutty and oily flavors. The fruit flavors are killed when Chardonnay is aged and stored in oak barrels. Fortunately, winemakers have also recognized this and are now making more un-oaked Chardonnays that have abundant fruit flavors.
